South Australia has long been the national engine room for shiraz – a standout source of the full-bodied styles that take our wine to the world.
Hearty shiraz from the Barossa has long found fame, though more diverse expressions are increasingly in the spotlight too. These range from the cool-climate elegance of the Adelaide Hills to fleshy and seductive McLaren Vale and structured Clare Valley.
A varietal this iconic needs its own dinner in homage, and trailblazing chefs at the helm. We have four.
Dave Pynt is the chef-patron of Burnt Ends, a modern Australian barbecue restaurant in Singapore's Chinatown. Stellar produce cooked over open flame is his specialty; critics and customers alike have embraced the eatery's wood-fired oven and the treasures it turns out.
Annie Smithers is an author, farmer, and one of Australia’s most highly regarded chefs - among the first to truly epitomise the paddock to plate ethos. Her Du Fermier restaurant in regional Victoria is routinely booked out months in advance, offering classic French farmhouse dishes to be enjoyed with friends and family.
Pynt and Smithers will be joined in the Town Square Kitchen by Hideki Ii of Tokyo’s Shirosaka, renowned for his attention to detail and creative flair. Ii – who trained in Sydney and spent three years in New York cooking for the Japanese ambassador – is celebrated for fusing traditional and modern techniques in dishes as delicate as they are delicious.
A local hospitality star is also set to feature: Maxwell Wines head chef Fabian Lehmann. The two-hat restaurant he leads is famed for its degustation and commitment to using the very best South Australian fare.
Paired beverages will be served alongside all four courses at this Tasting Australia event, with a drink and snack on arrival. Expect a celebration of shiraz in all its richly textured glory, and a meal uniting four of the hottest names in dining today.

Our menus utilise regional produce at the height of its season and take months of careful planning. Many of the dishes featured will not be adaptable for particular dietary requirements. Read more information here. This event can cater to vegetarian and coeliac dietary requirements, although the menu may not be designed or executed by the visiting chefs.
